I have to tell you the way I met Julian. (This is Raphael Benavides). When I opened my last restaurant here in East Harlem in the summer of 2013, Julian entered the restaurant and told the hostess that he needed to see me. I was sitting at a table going over menu items, he introduced himself and bluntly told me “I want to work for you” I looked up and I see this 15 year old kid, and asked what position he wanted and he said he was a chef and he wanted to start right away. I couldn’t help laugh out loud. After a series of questions, he wouldn’t take no for an answer. I decided to give him a chance and it has been one of the best decisions of my life. For the past 15 months he has been developing his culinary skills now working alongside some of the best chefs in New York City.
Julian’s work ethics are unparallel; anytime I'm catering an event anywhere he is the first person I call. He is one of the most passionate chefs I have met in my life, he is a sponge absorbing knowledge and I have no doubt that in the near future he will be an Iron Chef. He is that good, and he’s only 17 years old, and the best part of all: He lives in East Harlem.
